Three grape varieties for this traditional Blanquette de Limoux
This sparkling wine is a blend of 90% Mauzac, 5% Chardonnay and 5% Chenin, harvested exclusively by hand using sustainable farming methods. Mauzac is the region's grape variety par excellence, grown here for centuries.
Vinification
The grapes are harvested exclusively by hand when they are almost over-ripe. The grapes are pressed immediately at low pressure using a pneumatic press. This Blanquette de Limoux is clarified by chilling. Natural fermentation takes place with the indigenous yeasts naturally present in the grapes, and is stopped by filtration.
Tasting
Blanquette de Limoux Brut Caractère is perfect with a dessert of Normandy apple pie or citrus fruit salad, or as a chilled aperitif.
It is presented to us in its pretty butterfly colour. Its abundant white foam supports a string of fine, numerous bubbles. The intense bouquet reveals itself on aeration, with notes of hawthorn, acacia and floral juices. A hint of minerality adds complexity!
After an invigorating, pleasant attack, we discover a harmony of lemon and pink grapefruit aromas with a hint of hazelnut on the finish.
