This sparkling wine is a blend of 90% Mauzac, 5% Chardonnay and 5% Chenin. Mauzac is the grape variety par excellence of the region, cultivated here for centuries.
This "Originel" vintage is harvested exclusively by hand in sustainable agriculture. 

Vinification

The grapes are harvested exclusively by hand when they are almost over-ripe. The pressing is immediate at low pressure with a pneumatic press. The clarification of this blanquette de Limoux is done by cold. The natural fermentation is done with the indigenous yeasts naturally present in the grapes, this one stops by filtration. 

Tasting 

The Blanquette de Limoux Brut "Michèle Capdepon" is perfect with a dessert with a Norman apple pie or a nice citrus salad or as a fresh aperitif.
It is presented to us in its pretty butterfly dress. Its white foam is abundant supporting a cord with fine and numerous bubbles. The olfactory intensity reveals itself upon aeration with notes of hawthorn, acacia, flower juices... a hint of minerality adds complexity!
After a tonic and pleasant attack, we discover a harmony of lemon and pink grapefruit aromas combined with a hint of hazelnut on the finish.
