Vinification

It is on the hillsides of Villelonge d'Aude in the heart of the Cathar country that our plots are exposed with a density of 4000 vines/hectare between 350 and 450 meters of altitude. The oceanic influence and the Mediterranean climate allow us to offer you a wine with 3 exceptional grape varieties: Chardonnay, Chenin and Pinot noir!
The harvest is done only by hand with an immediate pressing at low pressure. The bottles are resting for more than one and a half years on laths in the cellar. Sustainable agriculture is in the family culture: "We believe in a simple oenology, respectful of the environment, that's why all our grapes come from vineyards conducted in sustainable agriculture."

Tasting

A crémant de Limoux with fine bubbles, a delicately fruity nose and a rose gold color! 
On the palate you will find a nice volume at the attack, the palate is well balanced with a certain freshness and a finish dosed with relevance
This Rosé can be shared as an aperitif or with a strawberry charlotte, served at 7-8° C.
