Vinification

This fruity Blanquette de Limoux méthode ancestrale is harvested exclusively by hand from almost over-ripe grapes. The grape variety is 100% Mauzac. For the record, this grape variety only exists in two appellations in France : Gaillac and Limoux. Mauzac is renowned for its acidity and aromatic neutrality, making it a subtle combination for sparkling wines. 

It is bottled during the March moon. This ‘Héritage’ blanquette is harvested using sustainable agriculture on the estate's oldest vines at an altitude of between 350 and 450 metres. 

Tasting

A fruity blanquette that draws its sweetness from the natural sugar in the grapes, to be shared as a festive aperitif or with dessert, such as a seasonal fruit tart. Its golden yellow colour and nose dominated by fruit (pear), acacia and honey will bring back memories of the South of France or flavours of yesteryear.

On the palate, you'll enjoy a smooth, harmonious finish that respects the expression of the fruit.
