Vinification

This crémant brut de Limoux is harvested exclusively by hand with an immediate pressing at low pressure with a pneumatic press. The clarification is done by cold.
Fermentation at controlled temperature in stainless steel tanks. A second fermentation in bottle for the foam is made in traditional method.
The bottles of "Michèle Capdepon" brut Limoux sparkling wine rest for more than a year and a half on laths in a cellar.

Tasting 

Notes of white flowers with fresh fruit and vine peach. This excellent Crémant de Limoux Brut can be enjoyed with Grandma's raspberry pie, a citrus salad, fois gras and even a seafood platter!
Its pale yellow color and its nose are all in smoothness! The dosage is subtle revealing a surprising persistence.
