The vineyard extends over hilly plots between Mediterranean scrubland and oak forest. The climate is Mediterranean with an oceanic influence. In the heart of the Cathar country, this crémant is composed of 3 grape varieties 50% Chardonnay, 40% Chenin and 10% Pinot noir.
The Capdepon family is respectful of the environment, all the grapes come from vines managed in integrated agriculture. This crémant brut de Limoux is harvested exclusively by hand with an immediate pressing at low pressure with a pneumatic press. The clarification is done by cold.
Fermentation at controlled temperature in stainless steel tanks. A second fermentation in bottle for the foam is made in traditional method.
The bottles of Crémant de Limoux Brut Excellence rest for more than a year and a half on laths in an air-conditioned cellar.
